Clearing off the space will help you to keep your ingredients organized and will give you extra room for chopping, stirring and plating. As you chop meat and vegetables, place them in prep bowls and line them up in the order that they are used in the recipe. If the recipe is written well, the ingredients should be listed in the correct order, so you should be able to follow along easily.
