I have been to this salon twice and have had a great experience. The atmosphere makes you feel pampered and all of the staff is welcoming. Dominique is a wonderful stylist. She truly cares and listens to what you are wanting done. She takes into consideration what you envision and works hard and calm to help you get there. She is totally in her happy place and element with her work and has done my hair beautifully. I totally recommend seeing Dominique if you are in need of a great stylist! Love this Salon!! Tastes pretty darn close to the classic but without all that butter, and with maple syrup in place of the white sugar. It does take some practice in folding in the flour and butter mixture. Sprinkle the flour on top of the egg batter, and gently fold in. Put the eggs with the salt in the bowl of an electric mixer with a whisk attachment. Spoon into 12 molds. I've flipped the madeleines in the photo at the top so you can see their pretty scalloped bellies. The madeleines with less butter came out delicious but not as browned as I'd hoped for. I love having special pieces of kitchen equipment that are just for 1 thing: sushi mats, jello moulds, madeline pans.
