This Power Moon can be found in Quadrant C4, on an alcove behind a large rock located on the North East side of the main island platform. Since it is a challenge room, you'll have to leave Cappy behind as you undertake this challenge - and you must make your way across rapidly vanishing platforms while dodging incoming fire from Sherm Tanks. At the start, it's a straight shot from the P-Switch across a temporary bridge to where a Sherm Tank is firing. Start rolling and keep tapping the roll button in 1 second intervals to keep up your speed, and curve to the side to avoid projectiles and blocks in the road. Once you reach the next P-Switch, keep rolling but stop shortly after passing the switch.

As long as you utilize long jumps and dives it's really easy, vanishing road rush. It's the hardest and it's not even close. Its possible to do the Metro Kingdom's version without the scooter and those platforms disappear faster, so there is a little bit of room for error, at least.
