Although The Hourglass is a relatively newly built pub, it still has a rustic and cosy atmosphere, yet an open and airy feel to the layout. We ordered a bottle of wine and a beer while we pondered over the menu and enjoyed some complimentary bread. Danny chose the classic prawn cocktail garnished with king prawns to start, which was served with salad and wholemeal sliced bread. The prawns were tasty and went down a treat. I opted for the home-made chicken liver parfait with a hint of brandy, served with red onion and chilli jam and toast. There was plenty for a starter and the presentation was simple. The flavours in the parfait mixed with the chilli jam worked beautifully together.

IT could be said the last thing Devizes needed was another pub. But The Hourglass, which opened in July, close to the marina on the outskirts of the town, has already shown it is filling a void. Back in the early s when the Marina Meadows estate was first built, there was the promise of a canalside hostelry but it has taken until now for it to become a reality. The Hourglass is being run by licensees Chris and Debbie Long who know all about keeping visitors to a pub on the Kennet and Avon Canal satisfied. They spent 19 years running the very popular Barge at Seend Cleeve. Patio doors open out onto a big balcony overlooking the canal and it has been a big draw even during this summer's seemingly constant rain. Food is important here and the Longs have been sensible by keeping the menu short and quality high. When I visited the pub for the first time the scallops proved an excellent choice as a starter - succulent and beautifully dressed. The lamb I had to follow was cooked to perfection. Just pink enough in the centre and slightly crispy on the outside. This time I went for a seafood salad followed by a wonderful fish pie that would make even Barry McGuigan Hell's Kitchen winner famed for his fish pie , look to his laurels.

The Hourglass is a premium pub, bar and restaurant located next to the stunning waterways on the edge of Devizes, allowing you to enjoy unrivalled canal views and the wonderful countryside landscape. The Hourglass is the ideal place to treat yourself to top quality food and drink in a truly special surrounding. I trained under Anton Mosimann, OBE, the most wonderful chef and the biggest influence for me as a chef without a shadow of a doubt. He is a Swizz chef and restaurateur who was Maitre Chef des Cuisines at the Dorchester Hotel for thirteen years, during which time its restaurant achieved a rating of two stars in the Michelin Guide. I think the whole plant based trend is interesting as well as the fusion trend of adding this, that and the other together. I like being able to use locally produced foods wherever possible. The Hourglass menu planning is very collaborative but I drive the process.

My family and I were trying out our kayaks on the Kennet and Avon Canal. We put in at Devizes Warfe, then paddled here at a relaxed pace for just over an hour. When we saw the hour glass we couldn't believe our luck! There is chilled background music which is unobtrusive and adds to the ambiance. The staff were very friendly and attentive, they took our drinks order and offered us a well priced menu. The beer was well kept and my wife had a latte. The children enjoyed the normal selection of soft drinks. The food came. Many thanks for a lovely lunch, we will return soon. This was one of our favourite eateries and we were looking forward to going back after lockdown.

When we went on to pudding, I was once again drawn by temptation and plumped for the pecan pie, especially when the waitress confirmed it came warm, and yes of course I could have ice cream with it if I preferred it to the runny cream advertised. Both desserts were really good, better than the mains, we agreed. The Hourglass, Devizes. Are you the Licensee? Please report any comments that break our rules.
