From my vantage point on the northern slope of the foothills of South Mountain, you can see all the ranges that surround our home and give it its shape: the Phoenix Mountains to the north, McDowells to the east and the White Tanks to the west. While the menu has cheeseburgers, filet mignon and an enormous ounce porterhouse, the iconic and most popular choice is the T-Bone. One of the most recognizable cuts thanks to the large bone that runs through the middle, the Tone comes from the short loin of the cow and includes two types of steak on either side of the bone: New York Strip on the long side and tender filet mignon on the short.
