For those who know — or perhaps are "in the know" — Plateau has been a long-established wine bar—come-eatery in The Lanes. Whilst still firmly at the helm of Plateau, Vincent and Thierry are now back in their native France making wines, leaving the day-to-day operations of the venue to their former head chef, Jake Northcote-Green. I can think of a fair few reasons for that: a fantastically interesting wine list dripping with natural wines and a good choice of top notch small plate dining that means you can snack or dine depending on your mood. There are few bars in Brighton where you can slug back a bacon-washed vodka with coffee liquor and espresso, but this is one and mighty fine it is too. They are minimum intervention, letting the grapes and natural yeasts do the work resulting in a surprising breadth of flavours. I last popped by in February with a chef mate for an early lunch on a damp Tuesday.

We wanted to try this restaurant and thought a Monday night would be a good time to visit. Lovely welcome and walked through the menu chalked on the blackboard. Our waitress spent a while going through the wines and recommended a fabulous red, cheaper than We ordered some bread and the seeded oil which we adored and she happily bought more oil out as it was so good. We ordered a couple of small plates, taramsalata with baby radishes, sprats with aioli, trout with creme fraiche and dill and chicken hearts - all of which were truly delicious. We shared the main of Jerusalem artichokes with rocket and a portion of crispy potatoes. I would highly recommend this restaurant for the excellent quality of food and wine but also for the great recommendations and service. We loved the restaurant from the moment we walked in. The atmosphere was superb and the music was excellent! The lamb dish was stunning and the dishes ordered straight off of the board were the perfect accompanyment for an otherwise fantastic night. Fantastic food, full of flavour and super fresh ingredients. The waiting staff are very knowledgeable about the menu and the sourcing of the the ingredients. We are never coming back More.

Looking round, the only people who were enjoying the music were the staff as many of the restaurant-goers were our age. For customer benefit and overall enjoyment, perhaps the staff could spend more time removing the annoying fruit flies around customers tables versus indulging in the next wine tasting at the bar and spending an age folding napkins.
