Mahleb, or Mahlepi is an aromatic spice made of a black cherry tree species, native to Middle East, but currently growing in the Mediterranean. Mahlepi has an intense aroma, a taste that reminds bitter almonds, cherries and a hint of rose or vanilla, and a bitter aftertaste which changes when baked. With a distinctive rich fruity flavor it becomes subtle after baked, kind of like a mystery ingredient which does not dominate the resulting taste. It is used in the traditional New Year's pie, the "Vasilopita", the traditional sweet dessert "tsoureki" and other recipes for sweet cookies and pies. You can also use ground mahlepi in other culinary preparations like juices and smoothies, spice blends and seasonings, and especially dairy products, as mahleb goes very well with dairy. Mahleb or Mahlepi is an aromatic spice made from the seeds of a species of cherry, Prunus mahaleb the Mahaleb or St Lucie cherry. The cherry stones are cracked to extract the seed kernel, which is about 5 mm diameter, soft and chewy on extraction. The seed kernel is ground to a powder before use. Its flavour is similar to a combination of bitter almond and cherry , [1] and similar also to marzipan. Mahleb is used in small quantities to sharpen sweet foods and cakes, [2] and is used in production of tresse cheese. It has been used for centuries in the Middle East and the surrounding areas as a flavoring for baked goods. In the Arabic Middle East, it is used in ma'amoul scones.
