Please see my disclosure for more details! I still remember being at a party for the new year, even though I was only 7 at the time, and how on earth has it been twenty entire years since then?! I decided the perfect way to celebrate the new decade was with a recipe that everyone has been requesting for a very long time — prosecco cupcakes! It seems the ideal time to post it and it is delicious too. I thought cupcakes would be cute — and I just love how they turned out! Honestly, I overbought, and had some left as expected… but wow. You can swap it to a rose prosecco for example, but again, the flavour might not be so prominent to be able to tell which one it is.

Please see my disclosure for more details! So the time has come, to morph my chocolate fudge cake into the very sort after chocolate fudge cupcakes. These are the most incredible cupcakes, so here they are. If you are after something delicious, but easier and more basic, then check out my chocolate cupcakes recipe! This sort of cake mixture is a lot thinner once you have made it, in comparison to a normal cake batter like a chocolate Victoria sponge. When I make it, I really just use my hand and a whisk and a spatula… there is no need for an electric mixer for these cupcakes as the batter is so easy to mix together. Melt the chocolate and butter, add in the dissolved coffee, whisk all the dry ingredients together, and whisk the eggs, vanilla and buttermilk together and you have a cake! I then use it up in another batch of cupcakes or use it in another recipe. The decoration of cupcakes like this is so easy, and I just adore something that is quick and easy to achieve. I went for adding my delicious chocolate fudge frosting to a large piping bag with my favourite piping tip, and swirled it onto the cupcakes. Find my other recipes on my Recipes Page!

Can I use half butter and half Philadelphia in this recipe, making it less sweet?? Is this recipe for cupcake cases or muffin cases? They would! So for any cupcakes, you can use caster sugar or brown sugar — these are my old classic chocolate cupcakes cakes do more commonly use caster sugar but these days I use light brown as I love it with chocolate cupcakes! This should be fine — just be sure to check all other ingredients and add xanthan gum if your flour does not already contain it. I found they were even better the day after making them. Do you need to alter cooking times? It may have seized or split a little! If in doubt, just increase the recipe to fill them more and the baking time will increase!
