These famous chocolate chip cookies started out at a bakery in Southampton, NY, and have gained well-deserved popularity across the country. The cookies, available at many grocery retailers in the US, are known for being incredibly buttery, crunchy, and thin but not too thin. To start, I covered the bottom of an 8-inch springform pan with a layer of chocolate-chip cookies. After making the cake I saw the importance of having a crisp cookie since they soften so much overnight. I used paneras cookies but could use less expensive crispy cookies.
