Horsehead cake

A few weeks ago I made a very special cake, horsehead cake. I live in Holland so I see horses everyday. OK, now to the cake.

But a necessary evil if one is to be a cake-maker. Although licking the beaters does ease the pain. I like playing with making the decorations and getting the cakes look pretty. Frosting is… well, frosting — great at any age. Her daughter takes riding lessons on a horse named Monkey :.

You bake the the chocolate cake in a 9x13 inch pan. Let the cake cool, then freeze it so that it will be easy to carve. When the cake is frozen, set it in front of you with the 13 inch side on the bottom. Cut a triangle from the bottom about 4 inches from the left corner. This will be the area between the horse's mouth and neck.

It took a lot to build it up so that it was nice and thick. My two year old horse lover was very excited. She recently started competing in a local rodeo and loves her horse. I always make my cakes a day ahead and freeze them so they are easier to shape and frost. I cut the shape of the horse head except the ear. The ear is the piece cut out between the neck and head. I frosted the horse cake with chocolate frosting. I then piped white frosting on for the mane for a contrast. The reins are black licorice ropes braided and tucked under the cake.

Bake a sheet cake the size that you need. With an icing filled bag and round tip, size 5, draw the horse head on the sheet cake. Cut out the shape. Use the picture below for reference. Make buttercream icing. Using star tip, size 18, cover the nose area with white icing. Add a little black to the edge of the white. With a small cake spatula, blend and smooth the nose area. Add a touch of pink icing on the nose and blend in.
