Dark Sugars is a chocolate shop that sells unique, good quality chocolates. It was started by a West African woman who is passionate and well-informed about chocolate. At the store, you can hear Senegalese music playing and browse the various piles and heaps of chocolates displayed on the tables. By that I mean you grab a bag and pick out whatever chocolate you want yourself. At the end, you have it weighed and pay accordingly. They have a variety of unique and fun flavors as well as your traditional plain truffles. The overdose truffle: a dark chocolate cocao coated truffle in the shape of a lemon wedge is my favorite.

Good as the drinks are, Dark Sugars is no one-trick pony. Stretching as far as the eye can see are rows and rows of beautiful, hand-crafted chocolates. They even offer up a hefty vegan range so no one is left out. That would be a bit of a bummer.

I use dark sugar in a fair amount of my savory cooking. Some of these dark sugars include sucanat my favorite , Japanese dark sugar, coconut sugar or palm sugar taken from the sap of a palm tree— coconut, date and others; sold in cake form in Southeast Asia , jaggery India — sold caked and granulated , panela Chile , chankaka Brazil. All these dark sugars are made by reducing usually with heat extracted sugar cane juice or palm sap to a paste without spinning or filtering out all the natural molasses and minerals. Whereas, white, granulated sugar has been boiled, reduced, spun, filtered, clarified and centrifuged, many times over to remove all other byproducts from the sugar, leaving only sucrose. These darker, less processed sugars do have more minerals and vitamins in them but the amounts are negligible compared to other nutrient dense foods you eat on a daily basis.

Before there was chocolate, there was cocoa. Nyanga began her quest in Spitalfields Market with just two truffles and a lot of chutzpah. Soon enough people fell in love with the authentic taste of the truffles and word got around about the woman who was bringing the sweet taste of Africa in the form of chocolates. This journey then continued to the famous Borough Market, where people would queue up to taste the irresistible chocolate that everyone would rave about. After many exciting years at Borough, Nyanga packed up her truffles and flew to South America and West Africa; where she spent three years researching cocoa on her family's farm. She returned feeling excited to bring her experience in Ghana to the streets of East London. In , Nyanga began her next adventure of bringing her handcrafted chocolates to Brick Lane. People came to the shop from all around the world just to get a little taste of Ghanaian cocoa beans. Today you can find Dark Sugars on Brick Lane, a Dark Sugars ice cream shop in Greenwich and a 4 storey flagship Cacao House in Greenwich that has recently opened at the end of , with more sites on the horizon.
