The Degree Oven. Every Christmas, I like to make a Prime Rib roast. I wanted to make sure it turned out perfect… so I bought a digital meat thermometer with a probe which I HIGHLY recommend to measure the temperature of your meat precisely. And what did I get? No pink in the middle at all. We ate it… but I was really disappointed by the outcome. It felt like a waste of expensive meat. Pull your roast from the oven when it reaches degrees, then rest it minutes on the counter top so that the juices redistribute through the roast. Trust me! While the meat is resting, the temperature will continue to rise and will hit about degrees for a perfect medium-rare, that is nice and pink in the middle. If you have guests that prefer their meat more on the well-done side, the end pieces of the roast will be more to their liking than the middle pieces. Also, you can use the old restaurant trick, and poach a couple slices of prime rib in the simmering au jus to make them more well-done if needed. I do recommend using an electric knife to slice the roast — it will be quicker, and much easier on your arm muscles! This time, I got an electric knife, and boy was I happy with the ease of cutting!

They usually go on sale about two weeks before Christmas, and the tag says the shelf life is 5 days. The weekend before Christmas is the ideal time to buy it if you plan to make a roast for Christmas Eve or Christmas day. The problem is that the prime rib is really popular at Costco, and as soon as they are put out on the shelves they tend to go quickly. You might have to wait a little while for another batch to be packaged and put out. There are two choices for the seasoned prime rib roast.

Before this attempt, I've attempted baking a prime rib in oven a couple of times. Each time, I purchased prime quality meat with the bone in. Everyone told me bone-in beef idea since the bone acts like a natural stand, aka a standing rib roast. However, the result was a prime rib where the meat near the bone was under-cooked and the meat near the edge pieces were over-cooked. I was disappointed and none of it looked enticing to eat. However, my December Costco prime rib roast finally turned out perfect. I wish I had a better final picture, but I was excited to eat! Crispy on the outside and a warm pink medium-rare on the inside. And the surprising part was I only purchased boneless "choice" quality meat from Costco.
