Ofc it is always safer to make multiple copies of the save you want to edit and personally I highly advice against messing around with the "Flags" section because that can actually break quests etc. You can freely edit your characters appearance etc. Changing the race directly, though, doesn't do anything because the game's racial score system determines your race and that's not something you can change with simple save-editing.
