Self-taught chef James Walters has developed the business gradually over 20 years, from a stall selling Levantine snacks at markets and festivals via a regular Borough Market presence that graduated to a glass-fronted sit-down restaurant in He is looking to expand further. For 33 years we've been curating reviews of the UK's most notable restaurant. In a typical year, diners submit over 50, reviews to create the most authoritative restaurant guide in the UK. Each year, the guide is re-written from scratch based on this survey although for the edition, reviews are little changed from as no survey could run for that year.

Borough has been known for its food markets since as far back as the 11th century. First the stallholders were trading on old London Bridge, but then in the 13th century they were moved to what became Borough High Street. A market has been here ever since. Borough Market has grown to over individual stalls. There are the traditional fruit, vegetables, bread and meat but these days the market reflects how cosmopolitan London eats. In this series , we review restaurants from an entirely vegetarian angle. While some restaurants will be specifically vegetarian, others will be mainstream. The design is a London take on s Beirut.
