Set the scene for a memorable meal with a starter of bluefin tuna tart, with edamame, blood orange, wasabi foam and tarragon, or confit white asparagus, pickled walnut, sauce gribiche and smoked olive oil; before swordfish, salted squash, spinach, ajo blanco and red pepper dressing. Perhaps dry-aged pork belly, green mustard, BBQ sugar loaf cabbage and nectarine tempt, finishing indulgently with coconut sorbet. This is a variation of a classic brulee that suits the colder months with flavours of caramelised sugar and dark chocolate that pair refreshingly with a mint spiked gelato. Italian sensibilities run through the dishes, but the Anatta team isn't afraid to stray from the classics. While each time you visit, you'll be presented with a fresh selection of eats, you'll be treated with a mix of the expected — like marinated olives, Bass Strait beef tartare or ricotta and chilli fregola — and the unique — like toast soldiers with smoked eel, coffee-cured ocean trout or Japanese cheesecake. If you can afford it, the wine pairings are a must — this is a haven for one of the most impressive collections of bottles on this side of the bridge. It was touted as a wine bar which would offer cheese, charcuterie and tapas. Annata was thoughtfully designed with a very warm and inviting interior and also offers outdoor seating when weather permits. They are a pure artistic creation that evokes and entices all of the senses. I consider Kurt and Mary family now because of the way they treat me and they love the same things I love. In all honesty, we have not given Annata its just due in the past couple of years. Chef Joshua started posting pictures on Facebook of specials that we could not ignore.
