Floating above it on a pop-up designer pontoon and bar, however, is welcome. The latest instalment, designed by Hemingway, is now open for summer. The bar is all Yves Klein-blue accents, banquette seating, French bistro-style chairs and luxe day beds shaded by a canopy of plane trees. The fit-out also features more than meters of golden blackbutt timber, used in balustrades and custom-designed ledges, bars and dining tables. The menu also channels a holiday in some European riviera. It includes oysters; antipasto and seafood platters; San Daniele prosciutto-wrapped melon; lobster spaghetti; and pizza. Pidapipo is slinging gelato in cups or brioche bun sandwiches. A dedicated gin and tonic menu showcases eight different local and international gin labels.

Daffodils are in bloom, the chill is lifting and Arbory Afloat has a new look. Specifically, Guadalajara, Tulum and Oaxaca. A small crew from Arbory visited on a research trip earlier this year. At Afloat this year, pretty much every hue on the colour wheel is represented — but fuchsia, bright green, and sunny yellow are some of the most heavily represented shades. The cocktail bar has a huge, cabana-style thatched roof that drapes down to frame the bartenders. And timber herringbone panelling throughout ramps up the beach vibes, too. In addition to classic cocktails, there are 13 signature cocktails, of which seven are agave-based. Two of the new highlights include a Spicy Margarita, available on tap, which combines Corralejo tequila with agave nectar habanero and pasilla chillies; and a boozy hibiscus iced tea. That roster is rounded out by frozen mango Margaritas; Espresso Martinis on tap; a horchata-based twist on a Pina Colada; and a mint-filled Mojito. And almost every cocktail is available by the carafe as well as by the glass.

The Yarra River's floating bar and restaurant has become a Melbourne warm-weather staple, and is now back for its eighth iteration — this time sporting a whole new persona as the newly minted Afloat Viva Mexico. After drawing inspiration from the Balearic Islands in and Turkey's Turquoise Coast in , the Afloat team has now spun the compass in the direction of Mexico, with nods to Oaxaca, Tulum, Guadalajara and Mexico City blooming to life across its interiors, the food and drinks menus, and its music and entertainment.
